Nutritional Jumpstart for the New Year

Director of Lovelace Bariatrics Dr. Duc Vuong appeared on "KASA This Morning" Wednesday to talk about eating health for the New Year. For those who indulged a bit too much over the holiday, Dr. Vuong shared a recipe with anchor Elizabeth Alvarez of a juice you can make at home with a juicer or blender. A fresh, homemade juice made of whole fruits and vegetables is a great way to make sure you get your daily servings of fruits and vegetables. Here is the recipe for the juice Dr. Vuong made, featuring superfood kale. You can adjust this recipe to include some of your favorite fruits and vegetables. 

1 bunch of kale

2 apples, peeled and seeded

1 orange

1 container of blueberries

1 tablespoon of ginger

1 squeeze of lemon

Cut the ingredients into small pieces — the smaller the better Dr. Vuong says. Put all ingredients into a juicer. If you do not have a juice, you can use a blender. Add some water. Blend until smooth. Add water until the desired texture is achieved. Drink as a shake for the additional fiber, or strain through a fine sieve for a juice drink.
